So happy to be able to participate in this month’s challenge. I have missed my Daring Kitchen challenges so much! Inspired by fellow Daring Kitchen participant, Audax – I decided to make homemade English muffins. It was easy AND worth it! Because I’m trying to lose baby weight we decided that hollandaise sauce might not be the best choice for our dinner. We used the homemade English muffins, turkey bacon and a roasted red pepper, garlic & eggplant in place of the hollandaise. I will always make my own muffins going forward. I have enjoyed poached eggs several times since my first attempt and they may just be my new favorite way to enjoy them!
