The March 2011 Daring Baker’s Challenge was hosted by Ria of Ria’s Collection and Jamie of Life’s a Feast. Ria and Jamie challenged The Daring Bakers to bake a yeasted Meringue Coffee Cake.
The Meringue Coffee Cake I made was delicious! One was eaten at home and the other accompanied hubby to work and yielded NO (zero) leftovers! Even my 3 year old enjoyed this cake. This is definitely a keeper recipe and I’ve linked it for you to print and make yourself!

The dough was gently spiced with cardamom. The filling was a blend of cardamom, ginger, cinnamon, cayenne and cumin (it was my intention to use Garam Masala, but alas I had none). Mixed with sugar and sprinkled on the meringue layer. I also used cashews and 60% cacao Ghiradelli chocolate chips.
This challenge was supervised by my youngest – he is very attentive in the kitchen – I’m thinking he’ll be my chef one day. This challenge wore him out.
